Yes, we did say sage – trust us on this one…

Remember making cola lollies in plastic cups as a kid? Well, homemade ice-lollies have just had a makeover and what was once a saccharine-sweet treat to help kids cool off in the sunshine has turned into a cool new craze for grown-ups.

Made from only fresh, natural ingredients, and infused with herbal and floral flavours, this new wave of icy delights are more ‘fresh and fragrant’ than ‘sickly sweet’.

We love these apple, ginger and sage lollies that pack a fruity, spicy and herbal punch all in one. And don’t be put off by the surprise star: sage. Its delicate flavour is good for more than just stuffing a turkey.

It has to be tried to be believed.

Stash a batch in the freezer, ready to whip out at a barbecue, garden party or a lazy afternoon on the terrace.

What you’ll need…
 

  • 2 cups of apple juice
  • 1-2 tbsp ginger juice
  • 1 tbsp finely chopped candied ginger
  • 3-4 sage leaves plus 3-4 small extra
  • 6-7 sage flowers, remove stalk plus 5-6 extra
  • 3-4 slices of apple
