Recipe: a healthy and floral Poké bowl

Aloha! We love the food trend that you can find everywhere nowadays. The Poké bowl is the hot dish right now. This bowl of deliciousness not only looks incredibly colourful, but is also super healthy. You don’t need to add to your air miles to enjoy this traditional Hawaiian dish nowadays. You can eat it locally or make it easily at home, but with your own twist. Say Aloha to this Poké bowl with flowers!

You will need

  • A base of lettuce or rice

  • Four of your favourite vegetables, such as cucumber, avocado, red onion and seaweed salad. 

  • Proteins from fish (salmon), meat (chicken pieces) or vegetarian (tofu)

  • A delicious dressing, as spicy as you like

  • Three delicious toppings such a spring onions, ginger and sesame seeds

  • Edible flowers* (such as calendula/marigold) 

How to make it

Step 1: 

The really aren’t any rules when preparing a Poké bowl, except that you should only choose ingredients that you really enjoy! Start by choosing the bowl. Are you peckish or really hungry? Then fill the bottom with lettuce or rice (white or brown are both allowed!). 

Step 2: 

Now it’s time to fill the Poké bowl further. We do that with various finely sliced vegetables. Did you know that Poké means ‘sliced’? Anything goes: cucumber, avocado, red onion and seaweed salad, but also try red cabbage, carrot, sweetcorn, edamame beans and delicious fresh mango.

Step 3: 

If you’re a keen pescatarian, opt for smoked salmon, tuna or prawns as the protein. Prefer grilled chicken or fried tofu? That’s allowed too! Then add a delicious dressing over the top, maybe based on spicy wasabi or nutty sesame.

Step 4: 

The toppings and edible flowers are added last to the Poké bowl as the finishing touch. The marigold lends a fresh and peppery taste like radish. All together it lends a little bit of extra bite, acidity and pep. Here too, let your imagination run wild and E ʻai kāua. Which means: Enjoy!

* One more thing: never just bite into a plant or (cut) flower - only use edible flowers from specialist suppliers that have been grown for consumption.
