Recipe: pancakes with Primula

A touch of aniseed on your plate

From syrup and icing sugar to pear, chocolate, cheese and bacon: you can imagine it being served on a pancake. But what many people don't know is that the Primula, also known as the primrose, is also suitable for putting in your pancake batter. The flowers of the Primula have an aniseed-like taste.

You will need:

  • Half a cup of Primula flowers

  • 200g flour

  • 2 eggs

  • 500ml milk

  • 2 tablespoons sugar

  • A pinch of salt

  • Vanilla essence

  • Butter or oil, for frying

How to make it

STEP 1

Wash the Primula flowers and let them dry on a tea towel. 

STEP 2

Sift the flour into a large mixing bowl. Then add the eggs, milk, sugar, salt and vanilla. Mix with a whisk until smooth and lump-free. Let this batter stand for 15 minutes. 

STEP 3

Fry thin pancakes in butter or oil. Brown them well on both sides. If you fry the pancakes with a medium heat, you will get the best results.

STEP 4

Let's eat! Serve the pancakes with flower honey or powdered sugar if desired. It is better not to put syrup on your Primula pancakes, because then you will not taste the primrose. Serve some loose primroses with the pancakes, if desired. It's pretty and even adds extra flavour!

Please note: before you start working in the kitchen, check with your florist whether the flowers of your Primula are suitable for eating.
