Recipe for Primula pancakes

Not a lot of people know that the flowers of the Primula have an aniseed flavour.  Therefore, in the past, people  used the flowers in the batter for pancakes. Want to find out what it tastes like? With this recipe you can take a journey through time that starts in the kitchen.

How to make Primula pancakes

This is what you need:

  • Half a cup of Primula flowers

  • 200g Flour

  • 2 Eggs

  • Half a litre of milk

  • 2 tablespoons sugar

  • A pinch of salt

  • Vanilla powder

  • Butter

Wash the Primula flowers and dry them on a tea towel. Meanwhile make a batter out of the flour, the eggs, milk, sugar, salt and vanilla powder. Mix the flowers through the batter and fry the pancakes in the butter. Delicious with syrup or sugar!

Note: before launching yourself in like a domestic goddess, check with the florist that your Primula's flowers are edible, or source them from a specialist supplier.
