Recipe: Easy to make Herb Cubes

Before your fresh herbs wilt and waste away, you can preserve and store them in the freezer for later! Our methods are quick, easy and provide you with a great starting point for soups and sauces, or saves the day when a dish needs a little extra flavour!

Preserving herbs
  • Herbs in Butter (or non-dairy alternative such as sunflower spread)

Just mix your herbs with butter and spoon into an ice-cube tray (silicone works best for butter), If you want to create a lot of herb infused butter in one go you can mix up a big batch and roll tightly in greaseproof paper to form a sausage shape, freeze and then slice off as and when you need.

  • Herbs in Olive Oil

Place any herbs in the ice cube tray and pour your oil over! Easy. To use afterwards simply pop out as many cubes as you need and add straight into the pan to begin cooking.

  • Herbs in Stock

Dissolve a good quality stock cube (or make your own stock if you fancy!) in hot water and pour over the chopped herbs, this is a great method for adding herbs to soups or sauces that are nearly finished cooking and you don’t want to add any more oil or fat.

  • Herb in Water

An ‘if none of the other’s float your boat’ option. You can’t go wrong here, this method preserves your herbs for all methods of cooking. If you need the herbs without the water in a desperate situation (if you’re making herby bread, for example) just dissolve the ice cubes in a glass of warm water and scoop the herbs out - sure they’ll be soggy but we bet your bread will still taste good!
